Erica’s Story
Erica Mayfield’s dream of Briar Rose began with her passion for serving others. What started as Rose Hill Catering to share her love for food and hospitality quickly grew into a full-time business, inspiring the creation of a venue that provides couples with everything they need in one beautiful location.
With over ten years of experience in catering and hospitality, as well as a background as a school counselor and teacher, Erica brings a unique blend of warmth and professionalism to every event. After working as a private chef for dinner parties and intimate weddings, she transitioned into full-time catering and wedding planning, driven by her love for helping couples create their dream celebrations.
Today, she is also a certified wedding planner and designer, dedicated to making every wedding at Briar Rose seamless and unforgettable.
Phillip’s Story
Phillip Mayfield shares the same passion for service that helped bring Briar Rose to life. With a diverse professional background ranging from Sports Medicine to serving as President and COO of multiple companies, Phillip has always been rooted in leadership and dedication to others.
Alongside his business expertise, he has mastered the art of grilling and BBQ through hands-on experience with top BBQ experts, continually refining his craft to bring bold, memorable flavors to Briar Rose events. Phillip is also an ordained officiant, offering couples an additional personal touch to their wedding experience.

Justin, Sous cHEF
Originally from South Carolina, Justin moved to Tyler at the age of four and has proudly called it home ever since. With a background as a land surveyor, he made a bold and inspiring decision to pursue his passion for the culinary arts. This career change allowed him to channel his creativity and dedication into the food industry, where he quickly became known for his talent and commitment to excellence. He brings a unique combination of intelligence, professionalism, and meticulous attention to detail to his role as Sous Chef. His ability to think strategically and execute flawlessly ensures every dish meets the highest standards. Whether mentoring others or contributing fresh ideas to the menu, Justin is integral to the unforgettable experiences Briar Rose is known for. Outside of the kitchen, Justin cherishes time with his husband, two kids, and granddaughter. His love for family and community inspires his passion for hospitality, making every guest feel welcome and cared for.
